A delicious fish dish for autumn days, paired with an Australian wine with notes of pear and ginger
An Australian wine accompanies this pan-fried pike-perch, served with crispy skin on a creamy leek and potato mash. The pike-perch’s flesh is mild, tender and firm, and the skin becomes wonderfully crispy in the pan. The mash, made from floury potatoes and leeks steamed in butter, lends the dish warmth and richness, whilst the mustard and white wine sauce adds acidity, a subtle heat and a lovely sheen. The dish is quick to prepare, easy even for beginners, and looks just like something you’d get in a restaurant. It’s perfect for the weekend, for guests or for anyone who fancies something light yet warming on chilly days. A dry white wine with fresh acidity and hints of pear in the glass rounds the whole meal off perfectly.
Ideal wine pairing: Longview ‘Queenie’ Pinot Grigio (Adelaide Hills, Australia)
Aromas of pear, green apple, white blossoms and a hint of ginger rise to the nose. On the palate, the wine is dry and lively, with a fresh acidity of 7.1 grams, a crisp, mineral character and a crisp finish. It was fermented in stainless-steel tanks at a controlled temperature, which ensures it remains fruity and pure. With 12.5 per cent alcohol and 2.7 grams of residual sugar, it comes across as mild and harmonious without being sweet. This pairs well with pan-fried pike-perch, as the acidity cuts through the butter and cream in the sauce, the pear and green apple complement the delicate fish, and the ginger complements the subtle heat of the mustard. The wine’s freshness also keeps the creamy leek and potato mash light, whilst remaining subtle enough not to overpower the fish. Serve it at 8 to 10 degrees in a classic white wine glass.
