  • 100 g Fresh Goat Cheese
  • 1 tablespoon of honey
  • Fresh thyme for garnish
  • Olive oil for drizzling

PREPARATION:

  • Roll out the puff pastry and place it on a baking sheet lined with parchment paper; score the edges to a width of about 2 cm.
  • Slice the zucchini, eggplant, bell peppers, and tomatoes into thin slices.
  • Toss the vegetable slices with olive oil, minced garlic, Herbes de Provence, salt, and pepper.
  • Preheat the oven to 200 degrees Celsius using top and bottom heat.

COOKING STEPS:

  • Brush the puff pastry edge with egg yolk.
  • Arrange the vegetable slices on the dough in a roof-tile pattern.
  • Bake the tart for 25 to 30 minutes, until the crust is golden brown and the vegetables are lightly browned.
  • Spread the fresh goat cheese in small pieces over the finished tart.
