The grapes for the Mansion House Bay Marlborough Pinot Noir Rosé were mechanically harvested, crushed and destemmed. Two to three hours of skin contact in the press ensured adequate extraction of colour and flavour. The berries were lightly pressed and the juice was then chilled for 72 hours. The subsequent fermentation took place in stainless steel tanks with selected yeast cultures at low temperatures between 12 and 15 degrees.
