Main Divide Sauvignon Blanc – A lively, elegant Sauvignon Blanc from Waipara

The grapes for the Main Divide Sauvignon Blanc come primarily from the “Te Hau” vineyard on Georges Road. The grapes were left on the vine until a must sugar level of approximately 23 Brix was reached. This lends the wine additional body. The harvest took place from April 15–20, 2023. After gentle pressing of the berries, the juice was fermented in stainless steel tanks at low temperatures and bottled shortly thereafter to preserve the crisp aromas and lively fruit character. Winemaking interventions were deliberately kept to a minimum so that the character of the vintage, grape variety, and vineyard location could unfold harmoniously. Vintage conditions were very good. The calm weather in the spring led to successful flowering and healthy fruit set, making it necessary to thin the crop in some areas. A good concentration of heat from early to mid-summer then allowed the grapes to ripen superbly. The rest of the summer and autumn brought a mix of hot days and cooler periods, although the rain was sufficiently spread out to ensure the grapes remained healthy and disease free.Main Divide is the local name for the Southern Alps and forms the backbone of the South Island, where the grapes for Main Divide exclusively come from. The vineyards were selected for their quality and ability to express unique regional flavours.

And this is how the Sauvignon Blanc from Main Divide tastes

The Main Divide Sauvignon Blanc seduces the nose with lively citrus notes and tropical fruit flavours, accompanied by herbaceous tones. Lemon sorbet, green apple, gooseberry and netted melon are set against a backdrop of freshly mown grass, thyme and a hint of lavender. On the palate, this Sauvignon is fresh and crisp, with juicy, animating acidity and an invigorating, underlying minerality. A very harmonious, balanced white wine from New Zealand with a crisp and lively finish.

And these dishes go well with Sauvignon Blanc from Main Divide

Try the Main Divide Sauvignon Blanc with fresh seafood and fish. This is a classic combination. Oysters, mussels, crab, prawns or grilled fish go well with this type of wine. The acidity of the Australian wine can balance the seafood and the fruity flavours complement the delicate sea flavours. The fruity acidity of this New Zealand Sauvignon Blanc can enhance the delicate fish flavours in sushi and sashimi and provide a refreshing combination. Translated with DeepL.com (free version)

Dishes prepared with citrus fruits also harmonise well with the fruity acidity of New Zealand white wine. These could be lemon chicken, grilled salmon fillets with lemon butter or prawns in a citrus marinade. The herbaceous notes of Sauvignon Blanc go well with asparagus. A simple preparation method such as steamed asparagus with a little lemon juice and parmesan can work wonderfully.

Green vegetables such as green beans, peas, spinach or broccoli can harmonise well with the Main Divide Sauvignon Blanc. The flavours complement each other and the acidity of the wine can emphasise the freshness of the vegetables. Sauvignon Blanc and goat’s cheese are a classic combination. The grassy and fruity flavours of the wine go perfectly with the characteristic taste of goat’s cheese. A salad with goat cheese or a cheese platter are good options.

Light, summery salads with fresh herbs, tomatoes, cucumbers, and a light dressing are also a great choice. They pair well with this Sauvignon Blanc from New Zealand; the fresh flavors complement each other perfectly. Grilled chicken, turkey breast, or chicken salads with fresh herbs are also excellent accompaniments to this style of Sauvignon Blanc from Waipara.

We can also easily imagine it pairing well with pasta dishes featuring light sauces such as pesto, tomato sauce, or lemon butter. The Main Divide Sauvignon Blanc has also proven to be an excellent match for summer appetizers like Caprese salad (tomato, mozzarella, basil), bruschetta, or gazpacho.
