A typical Niagara Cabernet Franc from an exceptional year

A fruity, spicy Cabernet Franc from a great year. Mash fermentation took place in stainless steel tanks and lasted two weeks. The wine then matured for 19 months in new and used French oak barriques.
2020 was a vintage for the ages (in more ways than one). Spring began uncharacteristically warm and became increasingly hot as the summer progressed. There was little rainfall and long periods of perfect growing weather. In the fall, the warm weather extended the season until the end of October. Some of the best wines Niagara has ever produced can be expected from this vintage.
The Pillitteri Carretto or Sicilian cart was traditionally used to carry goods to market and was made in the early 1930s. It was brought to Canada from Sicily by Gary’s mother in 1952 and is now used as the winery’s logo to honor the rich family tradition and the importance of the carretto to the family. Each family vineyard and wine is treated individually, as each has its own “personality” that needs to be expressed. The Pillitteris’ goal is to produce consistent, quality wines for customers: rich, full-bodied reds, fragrant and vibrant whites, all in a variety of styles that appeal to every palate.

And this is what the Cabernet Franc from Pillitteri tastes like

The 2020 Pillitteri Cabernet Franc has a deep ruby red color that hints at its intensity and complexity, and has excellent varietal character without the “green” or peppery notes often found in specimens that lack maturity. Instead, the nose is full of fresh, ripe berries, a hint of licorice and an abundance of cherry flavors accompanied by the complexity of vanilla and the toasted wood of long barrel aging. These characteristics are also found on the palate, which is very well balanced and offers youthful but soft tannins and a rich acidity from the cool climate that highlights the fruit and makes the wine very delicious.

  • Beef fillet with herb crust: a high-quality beef fillet wrapped in a herb crust of thyme, rosemary and garlic, gently roasted and served with a red wine reduction that complements the deep, spicy notes of the Cabernet Franc.
  • Braised Lamb with Plums: Slow-braised lamb nestled in a sauce of plums, star anise and cinnamon offers a perfect balance of sweetness and spice that highlights the fruity components of the Canadian wine.

Poultry variations:

  • Duck breast with cherry chili glaze: A succulent duck breast glazed with a sweet and spicy cherry chili sauce highlights the fruity and slightly spicy notes of Pillitteri Cabernet Franc.
  • Turkish chicken skewers with paprika and yogurt-mint dip: The spices and refreshing dip can address the subtle green bell pepper notes in the wine and offer a nice complexity.

Vegetarian delicacies:

  • Stuffed peppers with quinoa and black beans: A filling of quinoa, black beans, corn and tomatoes, seasoned with cumin and coriander, pairs beautifully with the earthy and vegetal elements of the wine from Canada.

Cheese and delicatessen:

  • Mature cheese platter with fig compote: a selection of mature cheeses such as aged Gouda or Manchego, served with a sweet fig compote to balance the rich tannins of the wine.
  • Grilled halloumi with lemon dressing and pine nuts: The salty halloumi, paired with the freshness of lemon and the crunch of pine nuts, offers a light but flavorful option that pairs well with the fruity aspects of the Canadian red wine.
