The Hill&Dale wine estate is still young. It was founded in Stellenbosch in 2001. The Stellenbosch district is the second oldest in South Africa after Constantia and represents about 14% of the country’s wine production. The area is surrounded by the Helderberg, Simonsberg and Stellenbosch Mountains and is influenced by the climatic conditions of nearby False Bay. The bay moderates the climate and keeps average temperatures low at around 20-25 degrees Celsius during the summer growing season. The soil composition of the vineyards ranges from decomposed granite on the mountain slopes to sandy, loamy alluvial soil in the valleys near the rivers. Wines from the Stellenbosch district are renowned for producing top quality wines that demonstrate the difference in the Terroir.

Winemaker with passion and vision

Guy Webber, winemaker in charge at Hill&Dale, is considered one of South Africa’s Pinotage masters with a personal record of seven ABSA top 10 wines, including a finalist for Hill&Dale Pinotage 2002. He is a passionate supporter of this indigenous grape variety, which he describes as his absolute favourite. Together with his team, he implements his vision of creating modern and unpretentious wines that can nevertheless be described as classic and authentic.
