The South Pacific skilfully bottled

The South Pacific, adjacent to the Te Awanga vineyard, is the inspiration for Elephant Hill’s “Sea” wines. The cooling sea breeze, the fine pebble soils and the careful winemaking form the basis for the elegance and purity that distinguishes this Viognier.

The year 2018 was marked by a warm spring, followed by a hot, dry summer. This led to an excellent maturation of the Sea Viognier in Te Awanga. The harvest lasted only 6.5 weeks. This was followed by whole grape pressing and fermentation in a mix of oak barrels (40 percent) and stainless steel tanks (60 percent). The wine was then aged in new French oak barrels (30 percent), in used oak barrels and in stainless steel tanks. Biological acid degradation was minimal.

The Sea Viognier of Elephant Hills welcomes with a very attractive and multifaceted bouquet. Finest scent of apricot and peach, accompanied by yellow apple, nectarines and spices. There are also floral echoes and subtle roasted aromas. On the palate very expansive and extremely juicy, with creamy texture and finely annoying acidity, a very stylish, animating wine with a long reverberation and salty-mineral finish.

The fruit-sweetness, aromatic complexity and texture of Elephant Hill’s Sea Viognier go very well with Asian dishes, especially sushi and Tailand cuisine. We appreciate it very much with curry or dhal dishes, pad thai or a Moroccan tagine. It is also a suitable accompaniment to dishes with pork or veal and dishes with ginger.
