Rhenish Sauerbraten with potato dumplings and raisin gingerbread sauce

Rhenish Sauerbraten with potato dumplings and a raisin and gingerbread sauce, served with Cabernet Malbec Claymore London Calling Clare Valley, Australia

A classic Rhineland wine for cold November days and a full-bodied Australian wine

Australian wine meets a Rhineland classic: the Sauerbraten is left to marinate for three days in a mixture of red wine vinegar, red wine and spices, until the meat is tender and has a mildly tangy flavour. It is then slowly braised in the oven, and the strained marinade is enriched with gingerbread and raisins to create a dark, velvety sauce that embodies the sweet-and-sour character of Rhineland cuisine. It is served with homemade potato dumplings, which soak up the sauce. The dish requires some preparation time but little effort, and is perfect for guests, Sundays and cold November days. A full-bodied red wine with spice, dark fruit and fresh acidity rounds off this meal perfectly.

Ideal wine pairing: Claymore London Calling Cabernet Malbec (Clare Valley, Australia)

Aromas of rose petals, plum, dried herbs and a fresh hint of menthol rise to the nose; in the glass, the wine glows a bright ruby red. On the palate, there are notes of juicy plums, dark sour cherries and green herbs, underpinned by crisp acidity and fine-grained, drying tannins. The cuvée consists of 70 per cent Cabernet Sauvignon and 30 per cent Malbec, was aged in barriques and comes from the cool 2023 vintage in the Clare Valley. With 14.0 per cent alcohol, 1.5 grams of residual sugar and 5.9 grams of acidity, it is dry and fresh. This pairs well with Sauerbraten, as the wine’s acidity complements the acidity of the marinade, the tannins cut through the braised meat, the plum and cherry fruit harmonises with raisins and gingerbread spices, and the herbal notes echo bay leaf and juniper. Serve the wine at 16 to 18 degrees in a Bordeaux glass; decanting is not necessary.

Rhenish Sauerbraten with potato dumplings and raisin gingerbread sauce

The roast beef from the shoulder is left to marinate for three days in a mixture of red wine, red wine vinegar, onion, root vegetables, bay leaves, juniper berries and cloves, and then braised in the oven for two hours until tender. The strained marinade is reduced with tomato purée, beetroot syrup, gingerbread and raisins to make a dark, sweet-and-sour sauce. The potato dumplings are shaped from boiled potatoes, egg and starch and cooked in salted water. The recipe serves two people, requires a bit of preparation and pairs perfectly with a full-bodied red wine with spice and fresh acidity.
