A light pasta dish made without dough, paired with a Canadian wine with citrusy freshness
A Canadian wine accompanies these gnudi, which are also known as ‘naked ravioli’. They consist of the filling used in ravioli – that is, ricotta, spinach, Parmesan and a little lemon zest – and are shaped without the pasta dough. A coating of durum wheat semolina gives the little dumplings a delicate shell, in which they are left to rest in the fridge. After a few minutes in salted water, they float to the top and are tossed in foamed sage butter until they glisten all over. Finally, freshly grated Parmesan and toasted pine nuts are sprinkled on top. The dish is vegetarian, easy enough for beginners to make, and requires only a few ingredients. It’s perfect for a cosy evening for two or for guests who fancy something light. A fresh, fruity white wine with a low alcohol content rounds the meal off perfectly.
Ideal wine pairing: Diamond Estate Mindful Pinot Grigio Vidal (Niagara Peninsula, Canada)
Citrus fruits, white peach, apricot and delicate floral notes rise to the nose. On the palate, there are hints of lemon zest, crisp apple and juicy stone fruit, underpinned by a lively, refreshing acidity. The finish is clean, fruity and refreshingly citrusy. This blend of Pinot Gris and Vidal comes from Lakeview Cellars in the Niagara Peninsula and was matured in stainless steel tanks. With just 8.0 per cent alcohol, 5.0 grams of residual sugar and 6.5 grams of acidity, it is light, dry and fresh. This pairs well with the gnudi, as the wine’s lemon zest complements the lemon zest in the filling, the acidity cuts through the sage butter, the peach and apple fruit notes play off the mild ricotta, and the low alcohol content does not overpower either the delicate spinach or the Parmesan. Serve the wine at 8 to 10 degrees in a standard white wine glass.
