Eggs in a Glass with Chives & Trout Caviar

- 1 kleiner Topf
- 1 Zwei hohe Gläser
- 1 Eierstecher
- 1 Teelöffel
Ingredients
- 4 fresh organic eggs Medium Size
- 40 g Trout caviar
- 1 a bunch of fresh chives
- 20 g cold butter
- sea salt Fleur de Sel
- Freshly ground white pepper
- 2 Slices of dark rye bread
Instructions
PREPARATION:
- Bring water to a boil in a small pot.
- Carefully pierce the eggs on the rounded side.
- Chop the chives into very fine pieces.
- Have two tall glasses ready.
- Toast the rye bread in a toaster or in a pan.
- Cut the bread into thin strips for dipping.
COOKING STEPS:
- Carefully add the eggs to the boiling water.
- Boil the eggs for exactly 6 to 7 minutes.
- The egg yolk should still have a runny center when it’s done.
- Rinse the eggs briefly under cold water.
- Peel the eggs whole, being very careful.
- Place a small pat of butter at the bottom of each glass.
- Carefully place two peeled eggs in each glass.
- Gently pierce the eggs in the glass with a spoon.
- Add a pinch of sea salt and white pepper.
SERVE:
- Place a generous tablespoon of trout caviar on each egg.
- Sprinkle the dish generously with the chopped chives.
- Insert the strips of rye bread into the sides of the jar.
