The unusual name of the Maxwell Little Demon Cabernet Merlot goes back to a physics experiment. In 1871, Scottish scientist James Clerk Maxwell proposed a thought experiment involving a hypothetical creature that acts as a gatekeeper between two chambers to sort gas molecules according to their velocity. At first glance, such a system could potentially create energy out of nothing… theoretically impossible given the laws of physics. This hypothetical gatekeeper became known among physicists as Maxwell’s little demon and has been a source of debate in the scientific community for more than a century.
The Maxwell Little Demon Cabernet Merlot is a classic Bordeaux blend. This wine from McLaren Vale in South Australia consists of 86% Cabernet Sauvignon and 14% Merlot. After fermentation, the Cabernet was matured in new and old oak barrels, the Merlot in exclusively used barrels and then carefully blended to achieve an optimally fruity and balanced wine. The wine is already easy to drink, but can also develop for up to 10 years in the bottle.
