Pillitteri Estates Winery prides itself on producing one of nature’s most exquisite gifts – ice wine. Icewine grapes are harvested when temperatures reach -8 degrees Celsius or colder. The hand-picked, naturally frozen grapes, when pressed, produce a juice with an intense concentration of sugars, acids, flavors and aromas. However, the yield is much lower than most wines, requiring ten times more grapes per bottle. The resulting wine has a high natural sugar content, low alcohol content, amazing acidity and is intensely sweet and flavorful. Pillitteri Icewine is a unique taste experience with flavors that can range from honey-sweet peach and apricot to tropical fruits like mangoes.

Typical of the Pillitteri Carretto Cabernet Franc Icewine, the nose is dominated by pronounced aromas of raspberry jam, ripe strawberries, and sweet cherries. Subtle undertones of figs, maple syrup, and lingonberries are also present. On the palate, it displays plenty of richness and body, with notes of strawberry compote, cherry juice, and cranberries. The acidity typical of a red ice wine is beautifully integrated, providing a balance to the lush sweetness. Overall, a characterful ice wine with a velvety, long-lasting finish.
