The Claymore Bittersweet Symphony, made from 100% Clare Valley Cabernet Sauvignon grapes, is a striking example of the richness and generous but silky smoothness for which Clare Valley Cabernets are known and loved. The wine has a lot of potential: it is a wine that already has a very good drinking maturity due to its rich primary fruitiness, especially if you open it a few hours before drinking. However, due to its natural acidity and tannin structure, it also has the potential to age easily for another 10 years in the bottle and still develop in its complexity. It has a finely integrated wood note, which it owes to its good 16-month aging in French barriques.

The Claymore Bittersweet Symphony Cabernet Sauvignon shows bangs of blackberry and dark forest fruits, plus notes of cassis and black cherry combined with hints of eucalyptus, dark chocolate and cedar open the door to a seductive, fruity spicy Cabernet Sauvignon. On the palate, this medium-bodied wine is dominantly fruity. In the extended finish you can feel the fine tannins and hints of dark chocolate. The good acid structure also contributes to the wonderful overall picture of this wine.
