- 250 g fresh salmon Sashimi-grade, skinless
- 1 ripe avocado
- 1 ripe mango
- 1/2 red chili pepper
- 1 a bunch of fresh cilantro
- 2 limes Juice and zest
- 2 Tablespoon of olive oil
- 1 teaspoon of honey
- sea salt Fleur de Sel
- Freshly ground black pepper
- Sesame black and white, roasted
PREPARATION:
Chill the salmon thoroughly.
Peel the avocado and the mango.
Cut the flesh into very small cubes.
Remove the seeds from the chili pepper and chop it finely.
Pluck the cilantro leaves and chop them coarsely.
Zest one lime and squeeze both limes.
Toast the sesame seeds briefly in a pan without oil.
COOKING STEPS:
Combine the avocado, mango, chili, and half of the cilantro in a bowl.
Add half the lime juice and 1 tablespoon of olive oil.
Season the salsa with salt and pepper to taste.
For the dressing, whisk together the remaining lime juice, honey, and 1 tablespoon of olive oil.
