The Longview Devils Elbow Cabernet Sauvignon is a good all-rounder that goes well with a variety of dishes. This Australian red wine goes particularly well with a range of meat dishes. Its smoothness and fruitiness can complement the flavors of various preparations. Some of the most popular meat dishes include grilled or roasted beef, lamb chops or legs, braised pork or roast pork, and game meats such as venison or wild boar. The characteristics of the wine can help to balance the richness of the meat and create a harmonious combination. This Cabernet Sauvignon can be a wonderful accompaniment to pasta dishes, especially those with meat sauces such as bolognese or ragù. The fruitiness of the wine can enhance the flavors of the sauce, while its texture and body can hold up well with the pasta. Australian Cabernet Sauvignon pairs well with a range of cheeses. Its medium body and fruit flavors make it suitable for a variety of cheeses. Try it with semi-hard to hard cheeses such as cheddar, gouda or manchego. The acidity of the wine can cut through the richness of the cheese and create a balanced and enjoyable pairing.

The grapes for the Longview Devils Elbow Cabernet Sauvignon come from the estate’s oldest vineyard. The Devil’s Elbow is named after a legendary hairpin bend on the old country road to the Adelaide Hills. The vines are planted on a north-facing slope with rows of vines running from north to south. The site is perfectly suited to Cabernet, with shallow, sandy loam soils on the surface and ferruginous rock and silica sand below. This helps to control growth and yield and with warm days followed by cool sea breezes at night, even, long ripening is ensured. All grapes were harvested by hand at the end of March to minimize damage to the grapes and then fermented on the skins for 14 days. After malolactic fermentation, the wine was aged for 12 months in second and third passage French oak puncheons.

On the nose, the Longview Devils Elbow Cabernet Sauvignon seduces with intense notes of blueberries, cassis and pencil tip, accompanied by a hint of mint. The palate is well structured with grippy yet ripe tannins, black fruits, dark chocolate and dried herbs. The acidity is finely nerved and gives the wine a good balance. An elegant, tasty Australian Cabernet Sauvignon with a long finish that will benefit from further cellaring.

[3845,3846,3849,3866,3870,4137,4140,4141,4145,4146,4147,4161,4163,4164,4165,4594
4128,3925,3926,3937,3959,4037,4086,4570,5622
post-15991","product","type-product","status-publish","product_cat-wines","product_cat-red-grape-varieties","product_cat-cabernet-sauvignon-en","product_cat-wine-type","product_cat-red-wines","product_cat-wine-style","product_cat-matured-complex","product_cat-savory-spicy","product_cat-noble-opulent","product_cat-spicy-racy","product_cat-velvety-round","product_cat-wine-origin","product_cat-australia","product_cat-longview-vineyard-en","product_cat-adelaide-hills-en","product_cat-wine","product_tag-wines","product_tag-adelaide-en","product_tag-adelaide-hills-en","product_tag-australia","product_tag-cabernet-sauvignon-en","product_tag-longview-vineyard-en","product_tag-red-wines","product_tag-beef-brisket-en","product_tag-devils-elbow-en-2","pa_alkoholgehalt-14-0-en","pa_allergenhinweis-contains-sulphites","pa_anbau-bewirtschaftung-conventional","pa_ausbau-in-barrique-barrel","pa_dekantieren-empfohlen-yes","pa_empfohlenes-glas-bordeaux-glass","pa_empfohlenes-glas-standard-red-wine-glass","pa_geschmack-dry","pa_jahrgang-2021-en","pa_lebensmittelunternehmer-wine-in-motion-gmbh-kellerweg-4-84494-neumarkt-sankt-veit-deutschland-en","pa_nettofuellmenge-0-75-en","pa_rebsorten-cabernet-sauvignon-en","pa_reifepotential-until-2030","pa_restzucker-0-5-en","pa_saeure-6-2-en","pa_trinkreife-from-now","pa_trinktemperatur-16-18-en","pa_vegan-produziert-yes","pa_verpackungseinheit-12-en","pa_verschlussart-screw-cap","pa_weingut-longview-vineyard-en","pa_weinland-australia","pa_weinregion-adelaide-hills-en","pa_weinstil-velvety-round","pa_weinstil-mature-complex","pa_weinstil-hearty-spicy","pa_weinstil-noble-opulent","pa_weintyp-red-wine","first","instock","taxable","shipping-taxable","purchasable","product-type-simple
