The vines, which are over 35 years old, grow on the \u201cGlasnevin Gravels\u201d\u2014gravelly, nutrient-poor soils with optimal drainage\u2014in the sheltered part of the Waipara Valley. The region\u2019s hot days and cool nights ensure a long ripening period and produce particularly concentrated, well-balanced grapes.  The 2024 vintage was characterized by low yields, a warm summer, and an ideal fall, which allowed for a selective harvest at optimal ripeness. In addition to the traditional cool fermentation in stainless steel tanks, a small portion of the harvest was fermented on the skins and left on the mash for about 200 days. A portion of Semillon, which was fermented in oak barrels, was also blended in. The result: an expressive, complex, and multi-layered Sauvignon Blanc with character. What makes the Pegasus Bay Sauvignon Blanc so special? This Sauvignon Blanc clearly stands out from the mainstream. The combination of old vines, low yields, careful hand-harvesting, and complex winemaking results in a characterful wine with depth that has aging potential. And how does the 2024 Pegasus Bay Sauvignon Blanc taste? In the glass, the wine glows a straw-yellow color with greenish highlights. The nose is intense and multifaceted\u2014with aromas of gooseberry, guava, green bell pepper, snow beans, fresh hay, and fennel, underscored by a mineral note reminiscent of wet stone.
