Depending on the degree of ripeness, the grapes were harvested at different stages in order to obtain a range of red and dark fruit flavours. Around 40% of the grapes were put into the fermentation vats as whole bunches, the rest was destemmed on top, keeping as many whole berries as possible. The vats were kept cool over the next few days to extract the soft, silky tannins from the skins of the Pinot Noir. After about a week, the natural fermentation of the must began. During fermentation, the skins of the grapes were gently tapped twice a day.   Once fermentation was complete, the grape residue was left in the wine for up to a week to extract the various tannins that give the wine structure and depth. The exact duration of this period was determined by daily tastings. The wine was then gently pressed and put into French oak barriques (about 20% new) from selected Burgundian coopers. In the summer after the harvest, when the weather became warmer, the wine underwent a natural malolactic (secondary) fermentation. After 18 months of ageing in these barriques, the wine was finally bottled.   &nbsp; And this is what the Main Divide Pinot Noir from Pegasus Bay tastes like The Main Divide Pinot Noir beguiles the nose with a delicate aroma of tamarillo, pomegranate and gogi berries, interwoven with hints of vanilla, wood smoke, lavender and an earthy, spicy underlay. The palate is fruity and supple, with soft, polished tannins and a ripe, savoury mouthfeel. An ethereal and elegant wine from New Zealand, paired with a rounded body and a splash of refreshing acidity that provides harmony and length, leading perfectly into the long, compelling finish."}
