It consists of 84% Shiraz and 16% of the Piedmontese grape variety Barbera. All grapes were harvested by hand. Both varieties were destemmed and crushed before undergoing cool, open fermentation for 14 days. Maturation took place in used French oak hogsheads (3 and 4 year old). On the palate, the Shiraz displays all the characteristics of a cool-climate wine: spicy, hearty with crunchy berries. The Barbera provides a juicy, cherry-like character, good drinkability and a taut acidity that gives the wine a wonderful structure.
